Well, it’s official. I have become a procrastinator. I am not exactly sure when this happened. I USED to be ultra efficient. Lists, color coding, and always tidy. Not anymore. I live in a squalor of heaps and piles, and am being overrun by my stuff. And this procrastination streak has gotten me into a bit of trouble recently. In fact even just today I was procrastinating writing this Paleo Cabbage Hash post and in the process accidentally knocked off other tasks I had put off. I refilled a prescription and paid a speeding ticket- tasks I had put off for weeks (months for the ticket).
One of the other things I had put off bit me in the ass last week. Snow tires. I have them, but I had not yet put them on my car. I can tell you snow tires sitting in a shed do you ZERO good in the first major snow storm of the year. Well, unless they are in a heated shed and there is a window, then you can sit on them and watch it snow. My procrastination provided an entertaining account of 9 things that went terribly wrong that day. Starting with the snow tires not being on my car and evolving from there. I think a detailed account is in order- maybe on a day where I haven’t procrastinated away my writing time.

This Paleo Cabbage Hash is not only affordable, and a great way to use leftovers (which I usually hate), but makes a great breakfast, or my fave: breakfast-for-dinner. Plus if you procrastinate like me, it’s ready in just a few minutes, so you can have a meal in a rush! It’s like healthy fast food!! And so many veggies!
- 2 Tbsp butter or ghee
- 1 clove garlic (crushed)
- ½ onion (diced)
- 10 mushrooms (sliced)
- 1 stalk celery (chopped)
- 2 carrots (chopped)
- 4 cups cabbage (bite-sized slices)
- ¼ cup water
- 2 cups leftover meat (chopped)
- 4 eggs
- In a pan saute butter or ghee with garlic, onion and mushrooms.
- Add chopped celery and carrots and stir well.
- Add cabbage and water and cover, letting the cabbage steam for about 4 min.
- Add leftover meat (we used roast beef) and stir, cover and let meat warm for 4-6 min.
- Top with an egg of your choice (sunny side up, basted, poached, etc.).
